Honouring the change of seasons

From long lunches on crisp blue sky days to cosy evenings overlooking the bright city lights, there's something extra special about Beverly – and our city – in the winter, and Head Chef, David Ball brings you a new menu to match.

Featuring elevated snacks for golden hour drinks, to vibrant mains, dishes are a reflection of David’s approach, whereby produce leads the way.

He says: "Very much in line with Beverly’s philosophy, our latest menu takes its inspiration from the change of seasons and abundance of new produce on our doorstep.

"On top of this, it's Beverly's guests that inspire me. I'm always re-evaluating what we're doing to keep them excited, and maintain the energy and momentum we're known for."

Hero dishes

Include a spicy tuna taco, mortadella skewer and Beverly Chop Salad, all of which are designed to complement existing favourites such as the tuna crudo and handmade lamb ragu, along with selections cooked over live fire, like the Old Bay half chicken and array of ethically sourced steaks.

"Diners can expect fresh and fun cooler weather dishes, and unique textures and ingredient pairings that fuse contemporary Australian dining with our signature southern Californian flair,” adds David.

"From smaller bites for sharing as the sun sets over the city, to lunches that linger on into dinner, they’re all designed to effortlessly take guests from day to night."
