The Camillo: a creative cocktail with a cause

Celebrating Negroni Week 2025

From its bitter-sweet flavour profile to vibrant red hue, the Negroni is one of those favourites that transcends time, and it’s why we’re always up for getting involved in Negroni Week.

Returning from 22nd – 28th September, the Imbibe x Campari initiative has established a global following since its 2013 launch, and as passionate supporters of the community, we especially like that the event isn’t just about the classic Italian aperitif.

The weeklong celebration has a charitable element, and has raised $5 million to date. As a participating venue we’re donating to the Slow Food Negroni Week Fund, whose mission is to foster a more equitable and sustainable world of food and beverage.

Additionally, for every Camillo Negroni sold over the seven-day period, $1 will be donated to the Women’s and Girls’ Emergency Centre (WAGEC), an authority to fundraise partner Beverly has previously supported via initiatives such as an International Women’s Day event we hosted, where $3,000 was donated to WAGEC.

Get involved in two simple steps

To support the cause simply head up to Level 24 between Monday, 22nd and Sunday, 28th September, and ask a friendly team member for The Camillo. There’s also the option to pre-order it when you book online.

How we’ll be crafting the cocktail

Developed by Beverly’s Bar Manager, Rico Deang it's designed to be enjoyed as a pre-meal tipple, through to nightcap.

On the inspiration behind the Camillo, he says: "We wanted to create a sophisticated twist on the classic, and went with Lustau Pedro Ximénez sherry to give the drink a hint of sweetness. We’ve also infused Tanqueray gin with Genmaicha in house, a Japanese brown rice green tea, to add a smokey flavour to the gin, and an earthy, savoury, and subtly sweet depth to the cocktail overall.

"The crucial Campari keeps those signature bitter notes, while the chocolate, which really complements the sherry, adds a touch of luxurious indulgence."

Ingredients:

30ml Campari
45ml House infused Genmaicha Tanqueray gin
15ml Lustau Pedro Ximénez sherry

Method:

1. The gin, Campari and sherry will be poured into a mixing glass and stirred to combine for around 30 seconds.
2. A large single ice block will be placed into a Double Old Fashioned glass.
3. We’ll strain the cocktail from the mixing glass over the ice block in the Double Old Fashioned glass.
4. Finally, we’ll garnish with a luxurious chocolate coin
